With the often frantic holidays almost over, it’s time to slow things down a bit and enjoy some of the simpler things … like a good breakfast to start the day.
Like so many meals, it doesn’t have to be time consuming or complicated.
Check and see what’s in the fridge that will work well with a fried egg.
I like open-faced sandwiches and for the base you can use bagels, English muffins or crusty bread. The important thing is to toast it.
Your cheese choice can be a creamy goat’s cheese or a sharp piece of cheddar.
Other ingredients can include spinach, as in the first recipe, or you can use leafy lettuce and fresh tomatoes.
There are so many combinations.
